Fried Rice
Such a great way to use left over cooked rice!
4 T coconut oil
3-4 cloves minced garlic
1 large onion chopped
1 t salt
1 t pepper
1 T liquid aminos or soy sauce
3 c. Cooked rice
1 c veggies either left over or frozen vegetables, such as peas, carrots, green beans
2 eggs beaten
Heat oil with garlic, onion, salt, pepper, and liquid aminos, until onion is soft and translucent, add cooked rice, stir fry for 5 minutes, add vegetables, fry until veggies are warm add eggs over medium heat and stir carefully until eggs are fully cooked. Serve hot on a bed of lettuce with cucumbers, fresh mint or parsley.
