Oatmeal Cake
Such a great use for left over oatmeal. At least 1 1/2 c. Cooked oatmeal.
If you do not have left over cooked oatmeal. Use at 1 1/2c boiling water and add 1 c oatmeal let cool.
1/2 c. Butter
1 c. Brown sugar
1 c. White sugar
2 eggs beaten
1 t vanilla
1 1/2 c. g/f flour or flour
1 t baking soda
1 t salt
Combine cool oatmeal with all ingredients. Pour in a 9x13 in pan. Bake 375* 30-40 mins. While baking combine 2/3 butter, 1/2 c brown sugar, 1/4 almond milk, 1/4 t vanilla in sauce pan over low-medium heat until combined. Pour over cake when it comes out of the oven, best if you cut the cake into squares so the sauce can seep down evenly on each piece.
